Anime Recipe: Kozuyu Chicken Soy Sauce Ramen from Food Wars

First, we tried Food Wars' Transforming Furikake Gohan. Now, we're trying one of Megumi's recipes from the same show - the Kozuyu Chicken Soy Sauce Ramen!

Spoiler alert: This is the best homemade ramen I've ever whipped up. Ever. If you like ramen, you will definitely want to make this.

If you don't know, kozuyu just means cuttlefish and carrots. So, this is a chicken ramen that also features scallops! I found this recipe in the Wattpad list where I found the recipe for the Furikake Gohan, but I thought this could be seriously simplified - plus my grocery stores didn't have a few of these items. So, this is exactly how I prepped it.

Ingredients for four servings

For the ramen broth:
  • 4 cups reduced sodium vegetable or chicken broth 
  • 0.5 cup reduced sodium soy sauce 
  • 2 tbsp sliced pickled ginger 
  • 0.5 sweet onion, diced
  • 2 scallions, diced
For the toppings:
  • 1 daikon radish
  • Small bundle of string green beans (to your liking)
  • 2 carrots (to save prep time, you can buy a bag of carrot chips)
  • 1-2 cups bean sprouts (to your liking)
  • 1 tbsp olive oil
  • 1 tbsp Hawaiian Hula Rub seasoning, or something similar (like garlic & onion powder)
  • 1 lb frozen scallops 
  • 1 package Perdue chicken strips (you can use Gardein meatless chicken strips if you're pescatarian)
  • 1 tbsp miso paste
  • 1 tbsp mirin
  • 1 tbsp reduced sodium soy sauce 
  • 4 cups cooked ramen noodles (4 packets of Maruchan; you won't be using the seasoning packet, so the flavor does not matter)

Instructions

  • In a slow cooker or InstantPot, add everything for the broth to the pot and let slow cook for at least 4 hours. If you don't have a slow cooker or InstantPot, you can cook everything in a pot on the stove top for about 40 minutes.
  • When it is closer to serving time: preheat your oven to 400 degrees Fahrenheit. Cut carrots into chips and cut in half to create half moon shapes. Slice your daikon radish into thin strips. Add carrots, daikon, string beans, and bean sprouts to a baking pan. Add olive oil & seasoning, then bake for 35 minutes. When done, split into quarters.
  • Sear scallops in a pan. If cooking frozen scallops, drain water from thawing before adding mirin, soy sauce, and miso paste to the pan to cook the scallops in.
  • Cook ramen noodles in boiling water for about 3-5 minutes and then drain.
  • Heat up your chicken strips before adding to bowl. Then, add broth from slow cooker, ramen noodles, and then 1/4 of the rest of your toppings and 1/4 of the scallions per bowl. Serve and enjoy!

The Verdict

This gets a 10/10 for both ease of replication and for taste - even with some substitutions for things that were either unavailable or that Anthony and I don't like (neither of us really like mushrooms, so we omitted them altogether. They were not needed, but feel free to add them if you like them!).

This was so incredibly flavorful, with a ton of flavors but none of them overpowered each other. This was hearty, nutrient-dense from all the veggies, and perfect for a chilly evening.
