Protein & Oat Pancake Bites recipe

I'm always looking for creative ways to add more protein in and curb my sweet tooth - and if I can do both at the same time, it's a win-win. These protein and oat pancake bites do just that and are low in SmartPoints and calories! These make for a fantastic quick, on-the-go breakfast or for a great snack before a run (which is what I made them for).

Truenutrition recently sent me some of their protein powder to try out, and what's really cool about this is that it was completely customized to my wants and needs. This is fantastic for not just people following Weight Watchers or a specific diet program, but for people who are vegetarian or vegan and struggle to find good options out there. They also offer customizable smoothie mixes and oatmeal - how cool is that? 

The other great thing about this is that in customizing it to my needs, I knew exactly what was going into my protein - and this is pretty clean! Each scoop (and it's a big scoop) is only 1 SmartPoint each and 110 calories, so you get a lot! The low SmartPoints value is largely due to this having a ton of protein and no sugar - it's sweetened with Stevia (they do have Sucralose sweetener options for those of you who can't have Stevia).

The oats are totally optional, but I'll include them in the nutritional information since that's how I made them. I've just been on an oats kick these days!

Ingredients

  • 1 tbsp honey
  • 2 tbsp unsweetened vanilla almond milk
  • 1 scoop protein powder (I used Truenutrition's custom blend)
  • 1 cup self-rising flour
  • 1 egg
  • 2 packets of Stevia
  • Cooking spray
  • Optional: 0.5 cup oats (I used traditional) 

Instructions

  1. Preheat oven to 375 degrees Fahrenheit, and spray a muffin tin with nonstick spray.
  2. In a large bowl, combine all ingredients except for oats and whisk until a pancake batter consistency. 
  3. If including oats, add to the pancake batter and stir.
  4. Pour the batter into the 12 muffin tins, and bake approximately 8 minutes (I recommend checking it in 5 minute increments depending on how thick your batter ends up; it bakes fairly quickly!).
